how can I write a text with underscore like: "hey_(hello) hello_(hey)" without the underscore disappear and turning the text inside the underscores to italic text

  You can escape the markdown by placing a backslash (\) before the markdown.
  The text, that you want is: hey\_(hello) hello_(hey)
