The new automatic emotes in channel names are very obtrusive from an accessibility standpoint.
Personally, I easily get sensory overload from too many things going on at once, and adding so many wildly colorful, unchangeable emotes to literally every single channel make this problem much worse than it would be otherwise. They make the channels much harder to see at a glance, and they distract from what's happening.
I think these emotes should be able to be set manually, and optionally.
That is, they should be off by default on all servers, and they should be able to be set manually for any channels you want to have them, to any emotes in the normal list and those that the server has available.
From what I can tell, Discord hopped on the AI bandwagon to automate these emotes. It could be nice to have that be an option, but it should not be enabled by default as it presents accessibility issues and could be obtrusive for servers that don't want those specific icons. I've seen so many servers with strange emotes for the channels, it doesn't make much sense to not let you change this.
