Is it against TOS / GDPR To Lock NSFW Channels and Adult Content Behind a ID Verification?
So Recently I have reached 100 Members on my server and I had alot of people Requesting NSFW Channels and sperate chats for 18+ members to speak it.
I made those channel but then found People under 18 was lying bout there age and gaining access to this.
Now, If I was to make an OPTIONAL Verification channel where people Can DM My Own Private Modmail Bot To Verify With Some sort of ID Like License Or passport But they have the oppurtunity to blur everything out except there date of birth name and photo.
This is to verify there age and who they are.
Then All the messages will be deleted and None of the information sent would be shared or saved.
Is this allowed, I need to know.
LONG STORY SHORT
is it allowed To make an optional ID verification system to prove users are above 18 to access 18+ Channels in my discord.

It isn't. When I say this, I'm assuming that you have a GDPR statement and that you prove the processing of said data, including the secure handling and deletion of it. Yet, in most countries it is not legally required for someone to provide proof of age. If you are requiring people to provide ID/Passports to prove age to access some channels may be seen as suspicious by some people.
If you are going to do this, make sure that you comply completely with GDPR (that is if you're based in the EU) otherwise if someone files a complaint you could be subject to a fine from the EU, which (trust me here) you do not wish to happen.

There are no definite answer to this question since it would depend on how the ID verification is implemented. If the ID verification is only used to unlock NSFW content and does not collect or store any personal information, then it would probably be fine. However, if the ID verification process collects and stores personal information, then it might be in violation of TOS / GDPR.
