Variable emoji size
Many people say the updated emoji size is too large, yet just as many say it is fine. A great alternative to please both camps: variable emoji size (as seen on Facebook Messenger). The longer you hold the emoji you want to send, the larger it will be. This solution is better than forcefully setting all emojis to a specific size, as the sender can easily choose the appropriate size of the emoji based on context and/or preferences of the recipient.

Many posts have the same concept as this. But, I do agree with you.
One thing I will disagree with you on is the way you want Discord to please both kinds of people - a better way of going about this is adding a slider (like the font size & discord zoom one). And when you send the emoji, other people see it as the size they have set in the settings.

I don't like messenger's "hold for embiggen" in terms of emotes, but these things are GIGANTIC when I prefer compact, small text and giving us back the old size or a way to revert it would be really nice. They're huge and really distracting when I use emoji to compliment text, not weirdly replace it with giant smileys.

I agree with this topic. Adding a slider to discord`s settings or chat settings would be a great solution.
Custom emoji is not always "well readable" because of their high level of detail, so it should help.
