Possible UI Improvements
In my opinion the interface which used to look nice and fresh now just feels boring. The amount of recent unnecessary changes also doesn't help it. So here's a list of suggestions that I think could help it's improvement ordered by how important I think they are.
The remotion of the chat bars and the addition of the weird emoji bars, which aren't even inline anymore, should be reverted in my opinion, I heard you did a code overhaul on those, but you could have at least done some effort to make them better with the new code, at least bring the separator bars and put the message buttons inline. Also if we could have the option to make the emoji button and the other options only appear when hovering over the right place, just like before, that would make it even better.
Months ago you also increased the size of emojis when they are sent without any extra text, despite many users suggesting a slider on the settings to change their size you didn't do anything yet. Is it that hard to simply add an emoji size slider at the same place of the other sliders?
Some people may like the emphasis you put on the activity of users with the updates, I myself just find it a bit overrated. I remember how back in the days the main screen of discord with the online friends list looked so clean, now there's an area with user activity from others which is completely useless to me and I would rather toggle it off. You added the option to toggle off the game library, why not the option to toggle this off? Also if I could toggle the buttons for the friends list off to have them to only appear when I hover over the user bar like before, that could be nice.
This one isn't the most important but it bugs me a lot as a bot developer. The update done to the embeds was both an upgrade and a downgrade in different ways. I like how some of it's elements like the title and the author part became more readable, the slightly darker background of the embed was also a nice change. But I have no clue why the titles of the fields were washed out like that. I mean, they're titles overall, they are meant to be visible too. And possibly the most annoying detail to me was how the space between the inline fields was shrunk down, like really? Were the embeds taking so much space to need that???
I am not going to suggest custom backgrounds, but I do think you could still offer the option to color different parts of the interface with any color you would like. This could be a custom theme unique to the user who set it and could be switched with the normal dark and white themes. If you preferred, it could be saved only on that specific client and not to be shared with any other device to avoid compatibility issues and maybe to keep it safe.
Now for the minimal aesthetic things. I know you have added the top bar long ago. However, I think the bar could be toggleable, I liked how the window originally looked like at the top.
And that's it.

The volume flyouts should accept mousewheel input (up higher, down lower). Example image here: https://imgur.com/a/z8ONOmz
