That's not possible, if the server is down, it means the information isn't available to be displayed at all.

Server screenshare was replaced with Go Live and they function almost identically, Discord is investigating the possibility of adding the ability to share your entire screen with Go Live.

It's not up to Discord which games are on the store, the developer of the game has to add it themselves.
