Accessibility toggle

While I understand that this new UI update is great for accessibility, there are plenty of users out there (including myself) that would prefer to keep using the previous UI.
I think a simple way to fix this would be a toggle in the "Appearance" page of the settings. Turning the toggle on would change the UI to the current, updated state, while leaving it off would allow users to keep using the previous UI that they like and already got used to.
In my opinion this would be an easy compromise that wouldn't require a lot of work (though I'm not a developer, so I might be wrong) and would solve the whole issue for both groups.
