I heard from a friend they keep all chat history for up to 5 years incase of any legal drama where law enforcement needs evidence to look back on for whatever reason. Discord is the first thing ive ever used where theres no option to clear chat history though. Its weird

There is no problem that they keep the Chat history, but the user must be able to clear the chat history for yourself!
