Discord is Listening - Please Keep Giving Feedback!
According to this reddit post, Discord has in fact been receiving feedback on the UI and considering it:
https://www.reddit.com/r/discordapp/comments/ezxouv/regarding_the_messages_redesign/
Unfortunately, there is no way to revert the UI because the code is gone, but they are making changes wherever necessary because they are looking into what their users are saying. If anyone who has been checking this site has a reddit account, it may be worth looking into giving feedback there.
It has been a struggle, but we can make a difference. Sure, we can't go back to what we were used to but we can at least try to get the Dev team to give us more options and fix things.

As for genuine criticism, I still think there should be an option to turn off highlighting when mousing over messages. It is causing genuine health problems for people with epilepsy, and is distracting for people with ADD/ADHD. For those with neither of these, it can also be kind of nerve-wracking and cause eye strain. Some people also just like the simplicity of not having the color (or in this case, value) changing by hovering over a message.
There should also be a toggle for the quick reaction bar. Some people may find it useful, but others do not react frequently enough to need it and would prefer right-clicking and selecting 'add reaction' as per usual. Sometimes people react on accident because of it as well (whether they have shaky hands or not), and it blocks text for longer messages.
The quick reaction bar also tends to use emojis you most frequently use in chat, and not what you use to react to posts, which is a little off.
Giving back a little more space for cozy mode, or at least bringing back the dividers, would be nice. The dividers would especially be helpful for dyslexic users (or people that want their chat box to look more organized, like me). While there is a toggle for space between group messages, it's not exactly helpful for single messages between different people.
Lastly, the 'NEW' bar does not disappear when you scroll all the way down to where the new messages are, which makes no sense. The only way to get rid of it if you're not part of the conversation is to click a different channel (or server).
While these issues have been listed before, I think it helps to repeat them.

The code is not gone, discord uses git and could easily revert the commit and rebuild the app to return it to its previous state. they aren't doing this cause of how much money they wasted on this new ui update.

I love that they say they removed some things, like the divider line, to reduce clutter. Then they add to the clutter by adding that pointless reaction bar.

one of the devs actually posted a screenshot of the exact git pull request that added the new update. it would literally take 2 clicks to revert.

Honestly, I'm autistic and have ADHD. This update is creating massive issues for me. It's creating eye strain and making it harder to process anything. It's making it hard to even just understand WHY they thought this was a good idea! They're always doing everything to make it accessible to everyone... and yet this UI, imo, sent all that down the drain. If they really want to make everyone happy, they should create options for people to either revert back or change it to their liking... something!!

I don't understand how any professional developer cannot revert changes. If you use GitHub, the repository can be reverted back to any prior node.

gross. we should be allowed to fix what they screw up

Reacting to Akiirah, that is true, and I completely agree they should do that within a week(before losing all Nitro users!!!), it is pretty hard for a infrastructure as theirs to push it all trough.
But still, they got this update trough? Then they can also revert it!

is the git stuff public? could i use it with BetterDiscord?

Unfortunately not, and besides that, BetterDiscord isn't allowed!

Instead of leaving members with an automated message for when your account is disabled, and never have an reply back as to when it's un-disabled, I think we should have a date for when our account is back. I believe its more convenient then a lot of people having to wait many days and hours due to staff members not replying. It just lacks the stress on staff as well. If you don't follow the rules again, then yeah, that should be an immediate delete of your account.

It would be nice if they listened to this post here - it is a basic moderation feature that is badly needed across a number of servers:
