highlight.js includes an option for godot's gdscript, but discord does not include this option.

I would find this really helpful too. There are many wonderful Godot focused servers and Game development servers that would benefit greatly from GDScript highlighting!

Godot Engine community is writing for this for a long time. The code in highlight.js is ready for GDscript. It's just waiting to be added.
