@Redjon, There's no text in the voice channels to disable read messages. You can't hide a voice channel since an admin will be able to drag and drop users into them.

@stella, the gray means that it's neutral and will take the server settings. If you were to mark @everyone with a red slash, they wouldn't be restricted to that specific option.

Hey Ko, If you turn off the "read messages" ability for @everyone and enable it for certain roles. It'll function as a private chat.
