Agreed. This policy they have where you are only able to verify ownership through the email associated with the account is complete nonsense. I am going through the same issue, and I am also considering ditching Discord because of this. I find it very funny that they (their support) told me that my “best bet” would be to create a new account, after nearly six years of using my account. I refuse to create a new account because I am not starting all over again, not after six years. This is completely unacceptable, and I am appalled at how incompetent Discord is, not adding a way to change the email on your account is your current one is inactive. A feature such as this should be a requirement for any service. If they do not add said feature I will probably quit using the service.
They could call me on the phone number associated with the account which is active, and verify ownership that way, or some other method, it really would not be hard for them to implement a way to verify ownership to get the email changed without access to said email account.
Unfortunately, I am not sure whether they will ever hear us and add a method to change our emails on our accounts, because it is not a super common issue, as not many people lose access to their email accounts. If we could somehow bring a decent amount of attention towards this issue then they might listen and add a way to do this.

It's even worse for me. I made a new Discord account in December (this support account is tied to my first Discord account, because I didn't make one for the new account), I created an e-mail address for it at skiff.com and verified this e-mail address after I registered my new Discord account, per usual.
In August, Skiff suddenly discontinued its e-mail service. I didn't hear anything about that until Sunday, when Steam (where I used the same e-mail address to make a second account) sent me a verification code because the whitelister of my VPN somehow didn't work correctly and Steam detected a changed location when I logged into the account. Skiff offered to let mails be forwarded to another e-mail address until February 9th, but only if you enabled the forwarding until August 9th. I missed that, because I only used the e-mail address for my new Discord and my new Steam account and only looked into it if there were any verification e-mails being sent to it from either service.
Now I can't access my skiff.com e-mail address anymore, but when I made a new GMail address to replace it and wanted to change it in Discord, it didn't work and I was told I have to access my old e-mail address to verify it (even though I already verified it, when I registered my new Discord account). I wrote Discord Support and explained the situation and I got told that they aren't going to change my e-mail address for me, because of “security reasons”. The support agent who responsed to me, Emuel, even used the exact same sentence to turn me down “[…] your best bet would be to create a new account.”
I asked him what kind of support they are, pointed out that changing your e-mail address if you lost access to it is a standard procedure, told him that telling me to give up my account is a completely crazy idea and told him again to change my e-mail address. He responds, claims he understands where I'm coming from and repeats I have to verify my old e-mail address to change it right in the next sentence….. And claimed that Discord doesn't collect any personal information and that the e-mail address is their only way of verification, then he told me that without a verified e-mail address, I won't get any Discord support for this account at all anymore and excused that with their “policy”.
I responded again, called him out for the refusal to give support and said they have to make an exception in that case, no matter what their policy says, because perishing mail providers can happen. I clarified that my e-mail address is already verified because I had to do that to even be able to register and use the account (which a support agent should know about) and called him out on the lie about collecting personal information by pointing to the phone number Discord asks you for in the user settings. Now I'm waiting another response, but I don't hold out much hope.
I had the same problem with changing my e-mail address in Steam. The support there simply changed my e-mail to the one I was contacting them from, without asking any questions or asking for verification, so that I could later change it myself to the new GMail address. No issues at all with Steam.
The Discord support staff just doesn't care.1 -
Like, I remember that in 2020 I create a account and then I lost access to the linked email, and my Wi-Fi router/system got changed, (I think some email providers at the least just need you connected to the Wi-Fi it previously was on to recover it) yet they still want me to VERIFY THROUGH THE EMAIL. What? Why can’t you just let me verify SOMETHING ELSE. Like when I set whatever, such as when did I PUT THE EMAIL, when did I do whatever but out of all things they make us do email. I want to KEEP MY 4 YR OLD account. The least? Verify ownership BY what we have done, set the whatever settings possible. I ALSO GOT HACKED ONCE AND BECAUSE OF DISCORD’S POLICY, (not letting me CHANGE my email because of some stupid verification), I AM PROBABLY AT RISK AGAIN. Please please PLEASEEEEE just let me change my email like other social media apps.. no wonder people don’t like Discord.. there are more & worse than just this situation though. 🤦♂️
