Channels & Categories Use Old Emoji (such as 👁 U+1F441)

When creating channels and categories, one with 👁 U+1F441 and another with 🍔 U+1F354, both appear in color during creation. However the first emoji appears as a bitonal character while the other appears as a color emoji, post-creation. Possibly this is due to interpretation of Emoji 1.0, or some other legacy character sets and Unicode.
