Allow colours in server categories

In servers, everything to your left is gray. Channels are darl gray over a dark background and the only difference between a text channel and vocal channel is a tiny icon.

Being able to give a custom colour to channel categories (or even channels directly) would do lots of good for readability and sorting categories. Similar to how one picks a colour for user roles. My server has quite a few categories and scrolling through them makes me lose my focus and I have trouble finding out which channel I was looking for.

Currently we've added emojis to the categories to differentiate them, but this isn't a perfect workaround.

I also assume that readability isn't great for colourblind users, but we should ask them directly.
