I would love to be able to make a secret channel so no one else even knows that it is there

    You can do this already by disabling the 'read text channels and see voice channels' permission. Unfortunately, it's not possible to make a channel secret from people who have administrator as they ignore all permissions, and you also can't hide channels from people using client mods as there are still ways to view all channels even ones which you shouldn't usually be able to see.
