Messages jumping around when scrolling fast/changing channels/server
Please remove this Place Holder imagery because it's jarring, disorienting & distracting, especially when scrolling chat.
Instead of stopping to load more messages when scrolling chat, it now lets you scroll past the last loaded message, display Place Holder imagery and then either stupidly snaps you back to the last loaded message before you scrolled in to the Place Holder imagery or it causes the chat to flinch which is just jarring and confusing. heck it often seems to fail to scroll to the right position when loading new messages so it never really feels good.
So it went from smooth predictable scrolling with momentary pauses for new content to load, to dizzying, disorienting twitchy/jumpy/inaccurate scrolling.
I'd much rather wait for stuff to load than to be constantly, frequently fooled by Place Holder imagery and awful scroll positioning.

Perhaps some of this is caused by using Firefox's Zoom Page function instead of Discord's own zooming method (which scales text but not UI layout, resulting in text getting cropped/ellipse'd)

You mentioned Firefox's Zoom setting, so I browsed Discord on it a while. I can confirm scrolling up jitters everytime new messages load or old get hidden. In particular, when loading new messages finishes, the view seems to reset to wherever it was when the loading got invoked (i.e. up to a second earlier).
Because the Web version tends to immediately have new updates, I decided to scroll around some more without the Zoom.
Even with Zoom disabled (i.e. 100%), Discord now seems to scroll up when loading channels (i.e. not scrolling, just clicking on a channel) by its own volition, thereby often invoking the loading of new messages. This is excessive when all new messages were already loaded. In any case, it causes more of the disorienting effects you described.

That's a perfect description of the issue, the scrolling resets to where it was the moment it begins loading new content, resulting in it jumping upwards (if you're scrolling downwards) or jumping downwards (if you're scrolling upwards) any time new content has to be loaded.
The alternatives is to have it not reset the scroll position which means you could potentially scroll past messages before they've loaded and thus miss discussion... or to pause and wait for new content to load before letting the person continue to scroll. I prefer the latter, which is how it previously behaved.

Yes, the jumping around is annoying, and even if that was fixed, the placeholder stuff is counterproductive and makes reading anything a trial. See #360049308873 for more complaints.

3 months later and just as awful.
Try to scroll 3 "units" down with the mouse scrollwheel, often end up 3 pages down instead. Middle-click/drag and move to scroll is just as bad. Even using arrow keys or pageup/pagedown is unreliable.
